Banana Bread Baked Oatmeal Bars
Who doesn’t love banana bread? These baked oatmeal bars are sure to take your breakfast game to the next level and are perfect to prep in advance. We love using our walnut milk for these to bump up the flavor & give them an Omega-3 boost to help you stay fueled up and focused.
Ingredients:
- • 3 medium bananas
- • 1 tsp vanilla
- • 1/4 cup maple syrup
- • 1 cup Elmhurst® Unsweetened Walnut Milk
- • 2 ½ cups oats
- • 1 tsp cinnamon
- • 2 tsp baking powder
- Optional - Mix-ins:
- Dairy-free Chocolate chips
- Chopped walnuts
Directions:
- Preheat oven to 350F and grease or line a 9x9 baking dish.
- Add all of your ingredients, except the mix-ins, to a bowl and stir until well combined.
- If adding extra mix-ins, fold them into your batter.
- Transfer to the baking dish & bake for 20 minutes.
- Let cool & enjoy!
Cut these into squares, pop ‘em in the fridge and you’ve got your morning prep done for the week. Or stash a few in the freezer and warm them up when you need something quick.
