With overnight oats this tasty, you're going to wish morning would come a little bit sooner. Crafted with sweet blueberries, refreshing lemon, and our limited-edition Vanilla Lavender Botanical Blend!


Ingredients:

  • 1 ¼ cup Elmhurst Vanilla Lavender Botanical Blend
  • 1/3 cup vanilla dairy-free yogurt
  • Juice & zest of 1 lemon
  • 1 Tbsp chia seeds
  • 1 cup rolled oats (not quick oats)
  • ½ cup frozen blueberries, slightly thawed & divided*
  • ¼ cup fresh blueberries*
*(can also use all fresh or all frozen blueberries)

Toppings/Layering Inspo: :

  • Extra Blueberries
  • Extra dairy free yogurt
  • Granola

Directions:

  1. In a medium bowl or container, combine oats, chia seeds, Vanilla Lavender blend, yogurt, lemon juice and zest and mix until well combined
  2. Once mixed, add half your frozen blueberries and all of your fresh blueberries, then fold in. We like to use a mix of fresh and frozen for the best combo of flavor and a nice purple color!
  3. In a small bowl, mash remaining blueberries with a fork. Cover both containers and refrigerate for at least 3 hours, or overnight.
  4. When ready to serve, divide oat mixture between 2 jars layering in spoonfuls of your mashed blueberries and extra yogurt every few scoops to get a swirl effect. Top with granola, fresh blueberries, or any other toppings & enjoy!

Store any leftovers in an airtight container in the fridge for up to 4-5 days.
