Easy Cucumber Salad
Light and creamy thanks to our new plant-based sour cream, this dairy-free cucumber salad is perfect addition for a weeknight dinner, or to double when you need a dish to pass for a crowd.
Ingredients:
- • 2 English Cucumbers, peeled & sliced
- • ½ red onion, thinly sliced
- • ¼ cup chopped fresh dill
- • ½ cup Elmhurst® Dairy-Free Sour Cream
- • 1 Tbsp apple cider vinegar
- • 1 tsp salt
- • 1 Tbsp maple syrup, or sweetener of choice (optional)
Directions:
- Place sliced cucumbers, onion & chopped dill in a large bowl
- Add in the sour cream, apple cider vinegar, salt, and sweetener of choice.
- Mix until all ingredients are well combined.
- Chill in the fridge for at least 30 minutes before serving.
- Enjoy!
Make this recipe ahead of time, or store leftovers in the fridge for up to 3 days.
