Light and creamy thanks to our new plant-based sour cream, this dairy-free cucumber salad is perfect addition for a weeknight dinner, or to double when you need a dish to pass for a crowd.


  • • 2 English Cucumbers, peeled & sliced
  • • ½ red onion, thinly sliced
  • • ¼ cup chopped fresh dill
  • • ½ cup Elmhurst® Dairy-Free Sour Cream
  • • 1 Tbsp apple cider vinegar
  • • 1 tsp salt
  • • 1 Tbsp maple syrup, or sweetener of choice (optional)


  1. Place sliced cucumbers, onion & chopped dill in a large bowl
  2. Add in the sour cream, apple cider vinegar, salt, and sweetener of choice.
  3. Mix until all ingredients are well combined.
  4. Chill in the fridge for at least 30 minutes before serving.
  5. Enjoy!

Make this recipe ahead of time, or store leftovers in the fridge for up to 3 days.
