WHAT YOU’LL NEED:

For The Casserole:
  • 1 32oz bag of frozen grated potatoes, thawed
  • 1 cup vegan cheddar shreds
  • ½ cup Elmhurst Plant-Based Sour Cream
  • 1 cup vegan cream cheese
  • 1 tablespoon nutritional yeast flakes
  • 2 teaspoons salt
  • ¼ teaspoon ground black pepper
  • 3 teaspoons onion powder
  • 3 teaspoons garlic powder
For The Topping:
  • 2 cups corn flakes cereal
  • ¼ cup vegan butter, melted

HOW TO MAKE THEM :

  1. Preheat your oven to 350℉ and grease a 9x13” pan
  2. In a large mixing bowl, combine the vegan cheddar, sour cream, cream cheese, salt, pepper, garlic powder and onion powder. Mix until well combined – if your mixture is too thick, just add 1 to 3 tablespoons of plant milk.
  3. Stir in the thawed potatoes and transfer to your pan.
  4. For the topping, combine cornflakes with vegan butter and stir until coated.
  5. Sprinkle your topping over the casserole and bake uncovered in the preheated oven for 50 to 55 minutes, or until the top is golden brown and the casserole is heated through.
  6. Serve the potatoes hot and top with grated vegan cheese and your favorite chopped herbs!
