Red, White & Blueberry Popsicles
Crafted with our dreamy Coconut Cashew Milk and your favorite seasonal berries, these sweet and creamy popsicles are the perfect way to cool off this summer.
Ingredients:
- 2 cups Elmhurst Coconut Cashew Milk
- ¼ cup coconut yogurt
- 1 tsp vanilla extract
- 2 cups mixed berries, divided
- Maple Syrup, to taste
Directions:
- Combine coconut cashew milk, coconut yogurt, vanilla and a drizzle of maple syrup
- Blend half of your berries with another drizzle of maple syrup until smooth and combined
- Fill 1/2 of each popsicle mold with blueberries then pour in coconut cashew milk mixture to fill in around the berries
- Tap to let out air bubbles.
- Freeze for 20 minutes, then top with berry puree & insert popsicle sticks
- Continue freezing for about 4 hours, or until firm.
- Remove from freezer and let sit for about 5 minutes then gently pull to release them from your popsicle mold – enjoy!
