Easy Vegan Tostadas
If you’re looking for a simple way to spice up your taco night, these vegan tostadas are super tasty and easy to whip up. Made with refried beans, creamy avocado, and our dairy-free sour cream – all layered on a crispy tortilla for the perfect crunch.
Ingredients:
- • 2 tortillas
- • Cooking spray
- • ½ cup vegan refried black beans
- • ¼ tsp garlic powder
- • ¼ tsp cumin
- • ¼ tsp chili powder
- Optional - salt to taste
Our Toppings of choice:
- • ½ cup shredded lettuce
- • ¼ cup pico de gallo
- • Sliced avocado
- • 2 Tbsp Elmhurst Sour Cream
- • Juice of ¼ of a lime
Directions:
- Heat a small skillet over medium heat and spray with the cooking spray.
- Place the tortillas in the pan and cook for 1-2 minutes per side, or until crispy. Set aside.
- Add refried beans to your pan with the spices and heat until warm
- Start by layering your beans, then the lettuce, pico, avocado & any other toppings
- Add a squeeze of Elmhurst dairy free sour cream
- Finish it off with a drizzle of fresh lime juice.
