A SHOCK DECISION

In 2016, Henry Schwartz closed New York City’s last dairy. Elmhurst had been in his family over 90 years, since his father and uncle hand-bottled and delivered milk to Queens and Brooklyn in a truck full of ice blocks.
The cows had long since gone, yet a famous tradition had ended…

…Until, the next year, Elmhurst reappeared. As a plant milk company.

What changed this staunch dairyman’s mind?

A stroke of chance

Henry was concerned. Milk consumption had been declining since the 1970s, while plant-based alternatives grew. First it was soy, then almond. Whatever the source, the milk landscape was shifting, and not about to stop.

In the middle of these doubts, Henry had a chance meeting with a famous food technologist, Dr. Cheryl Mitchell. After many years of development, she was finally ready to unleash HydroRelease™, a unique method primed to revolutionize plant-based nutrition.  

Using just water, HydroRelease™ separates the components of a nut, grain, or seed, before reassembling them as a creamy, beverage-ready emulsion. The original ingredient’s nutrition is maintained, and no gums or emulsifiers are needed to hold the product together.

A WELCOME RETURN

The converted dairyman and tireless inventor partnered to bring this technology to market. A line of clean-label nut milks debuted at Natural Products Expo West in 2017 under the familiar yet new name, Elmhurst Milked™. We have since added unsweetened, whole grain, and even peanut-based products – with so many more possibilities to explore.

Almost a century later, we still keep the spirit of the delivery truck weaving through the New York streets. For all of their forward vision, Henry and Dr. Cheryl have simplified the world. They’ve made it possible to cut of the things that don’t really matter, so as to better enjoy the things that do.

Dr. Cheryl Mitchell

Having received the Women Entrepreneur of the Year Award by the State of California for her lifetime achievements in foods, it was obvious that Dr. Cheryl Mitchell had become a leading culinary innovator. Having a pioneering spirit, brilliant scientific mind and commitment to health, she started her career as a food scientist developing cooking methods that would retain the nutritional value of plant based foods. It wasn’t long before she was recognized as a world expert in the cooking and processing of grains. It was her expertise that is used to make the largest selling rice beverages in the United States.
However, Dr. Mitchell was not satisfied with this accomplishment as it was only the beginning of what she believed could be done to maximize the nutrients and value of plant based foods. She was right. After 20 years, she finally was able to unleash the proteins and all of the nutrients in grains, nuts, and seeds using only traditional mechanical and fermentation methods. The end result was the transformation of these plant based foods into a ready to consume, deliciously creamy, natural plant milk having essentially all the nutrients and superior digestibility of the starting material. She has shown the world how to transform the cooked grains, nuts or seeds and release the nutrients that not only make the creamy plant milk, but stabilize it as well. There is no need for added thickeners, emulsifiers, stabilizers, or oils, as these are all naturally contained in the plant and just needed to be released.
Excited by the potential of the nutritional value of “Milked Plants” vs. the existing thickened water with added plants for flavor, Henry Schwartz convinced Cheryl Mitchell to bring her methods for making these non-dairy Milked Plants to Western New York, where the expertise of Elmhurst in the packaging and distribution of dairy milks, could be used to deliver these unique milked plant products throughout the East and beyond.
