CREAMY ROASTED RED PEPPER DIP
Crafted with our smooth & creamy Sour Cream, this super simple dip is the perfect snack for all your get-togethers – but it’s so tasty, you just might want to finish it all by yourself!
Ingredients:
- 1 jar Roasted Red Peppers (or 2 cup homemade roasted peppers)
- ¼ cup Elmhurst Dairy Free Sour Cream
- ¼ cup Tahini
- ½ cup Vegan Parmesan cheese
- 2 fresh Garlic Cloves, crushed or roughly chopped
- 2 Tbsp lemon juice
- ¼ teaspoon Smoked Paprika
- Salt & pepper, to taste
Directions:
- Add peppers to a blender or food processor, along with the sour cream and all other remaining ingredients. Blend until smooth or desired texture, stopping to scrape down the sides as needed.
- Transfer to a bowl and enjoy, or if making in advance, cover and refrigerate until almost ready to serve. Bring to a room temperature and stir before serving. Optional - drizzle with extra virgin olive oil.
Notes: You can store this red pepper dip in the fridge in a sealed container for up to a week. If planning to store for multiple days, once in the container drizzle with olive oil to prevent drying before sealing.
